Green Pea Soup with Chives

Here's another springy green pea soup recipe: this one is a silky smooth puree! It's creamy and light, and perfect to accompany a grilled cheese or the first course in a dinner party. For the garnish, savory croutons made with rye bread are the perfect compliment. And if you have them, add chive flowers: they add a beautiful touch! If not, thinly sliced chives work perfectly as well.

  • Are fresh peas better in recipes than frozen? Actually according to Epicurious, no! Fresh peas are great for snacking, but frozen hold up better in recipes and have all the same nutrients.
  • Should I eat canned peas? There’s often lots of sodium in canned peas, and their texture becomes pretty mushy. So we recommend using frozen!

Description

This peas recipe takes just 5 minutes! Cooking frozen peas with garlic and lemon makes them taste incredible. It’s an easy side dish that everyone loves!

Ingredients

  • 2 cups frozen peas (about 10 ounces)
  • 2 garlic cloves
  • 1 tablespoon salted butter
  • 1 tablespoon olive oil
  • ¼ teaspoon kosher salt
  • Fresh ground pepper
  • Zest of 1/2 lemon, optional

Instructions

  1. Rinse the peas under warm water and shake off excess liquid.
  2. Smash and peel the garlic cloves.
  3. Add the butter and olive oil to a large skillet over medium-high heat. Add the smashed garlic and frozen peas and cook for 2 minutes until warmed through but still bright green.
  4. Season with the kosher salt, fresh ground pepper and lemon zest. Discard the garlic cloves and serve immediately.
