This delicious Mexican shrimp co*cktail appetizer is always a huge hit with guests. For an incredible presentation, serve in a large margarita glass on a plate, surrounded by nachos.

Although Cinco de Mayo isn’t really a traditional holiday of Mexico, today it is widely celebrated in the United States and is an excellent excuse to enjoy delicious Mexicanfood and drinks.

I’m not really even a fan of tequila in general, but I’m telling you – you don’t have to be in order to enjoy this Mexican shrimp co*cktail recipe.

How to Make Shrimp Campechanas

Have you ever had a craving for something and couldn’t come up with what it was? This is usually the case when I have an intense hankering for Mexican food.

It can be anything from tacos to enchiladas to tamales, but my mouth just craves that south of the border taste! Lucky for us, there are so many ways to make delicious Mexican dishes without having to go out for them.

One dish in particular is Shrimp & Avocado Campechana. The best part about this recipe is that it’s really easy to make at home!

Ingredients

1 cup of 901 SilverTequila, plus 2 tbsp reserved1 pound of medium shrimp, shelled and deveined1 can of san marzano whole peeled tomatoes, drained¼ cup of tomato pasteJuice of two limes plus 1 cup of lime juice (for poaching)1 small sweet onion3 cloves of garlic1 tbsp of fresh basil1 cup of cilantro1 small cucumber, seedless or seeded, peeled and roughly diced1 small Serrano chile, seeded and stem removed5 tbsp of salt1 tbsp of prepared horseradish½ cup of Spanish olives, pitted1 tsp of finely ground pepper1 large avocado, diced1 cup of fresh grape or cherry tomatoes, diced or quartered.* optional, add ½ c of Chile Sauce in lieu of tomato paste

For Shrimp

Add salt, lime juice, water and 901 Silver Tequila to a large pot and bring to a low boil.

Toss in shrimp and remove from heat.

Allow to poach gently, 4 minutes or until pink and cooked through.

Remove shrimp from water and set aside to cool.

For Sauce

Combine tomatoes, paste, lime juice, onion, garlic, serrano, cucumber, basil and cilantro, olives and 3 tbsp salt, pepper and horseradish to a food processor and pulse gently until incorporated.

Once Shrimp have cooled toss in with the tomato mixture.

Slowly add in the Avocado, fresh chopped tomato and add to a co*cktail glass such as a Martini or Wine Glass.

Drizzle with 901 Silver Tequila.

Serve with homemade tortilla chips or make it a centerpiece by placing in a jumbo margarita glass centered on a large nacho platter.

This ShrimpCampechana is a traditional Mexican shrimp co*cktail recipe using tequila.

Ingredients

Scale

1 cup of 901 SilverTequila, plus 2 tbsp reserved

1 pound of medium shrimp, shelled and deveined

¼ cup of tomato paste
